Crazy About Popcorn

It's official, we love popping our popcorn with coconut oil instead of canola oil!

Just add a tablespoonful of coconut oil into your pot and heat on medium high. Add one kernel to your pot and put the lid on. When that kernel pops the oil is hot enough. Add enough kernels to your pot to cover the bottom and swirl around to coat each kernel with the coconut oil. Place the lid on the pot so that it doesn't create a seal and the hot steam can escape on one side. 
After a couple minutes use pot holders to hold the lid on and lift and shake the pot around a bit and then put back on the burner. Once the popping slows to only a couple pops every few seconds turn the burner off and move the pot to a cool burner.
Take the lid off and sprinkle liberally with Himalayan pink sea salt, or your favorite salt (just not table salt!)
